In his mind he is gone back more than two decades to a tiny Scottish inn where Bradley enjoyed a dish of prawns. “It was a simple dish, but just the way the cook prepared it, you could savour each prawn,” the chef explained.
Today, as the Oyster Bar’s chef consultant on Narathiwas Rd Soi 24, Bradley Borchardt handles not solely the wide range of fresh oysters from all over the globe but the freshest of seafood as well, arriving by plane twice weekly. The enthusiastic chef turns almost poetic when talking about his dishes.
A romaine salad is not just a romaine salad – not when Borchardt adds avocado, king crab and a smoked chilli dressing. The Oyster Bar serves chillies that aren’t available anywhere else in the Thai capital. Mostly from Mexico, the chillies range in taste from smoked to sour to sweet, from extremely mild to hotter than hell.
They have some very catchy names as well – chilli guajillo, chilli arbol, chilli ancho and smoked morita. These he grinds and pounds, adding to sauces, to blend with other spices to rub into the fish prior to sautéing, just to add that “certain something” increasing the dish’s palate-pleasing element.
The small restaurant does indeed feature a bar, stocked with the day’s freshest available oysters. Depending on the seafood available, the offered menu at the Oyster Bar is different every day.
